Split Pea Soup – Vegetarian

Ingredients

1 tbsp Olive Oil
2 Large Onions, Chopped
1 tsp Sea Salt
2 cups Dried Split Green Peas, Picked Over and Rinsed
5 cups Water
1 Lemon – Juice and Zest
Smoked Paprika, Toasted Almonds, and/or Parsley

Directions

Place olive oil in a large pot or dutch oven over med-high heat. Stir in onions and salt and cook until the onions soften, just a minute or two.

Add split peas and water. Bring to a boil, and then reduce heat to simmer for 20 minutes, or until the peas are cooked through (but still a touch al dente).

Remove half of the soup and place in blender and blend into a puree.

Return the blended soup to the large pot and mix together with the chunky soup. Add more water as necessary.

Add the juice of one lemon.

Place in individual bowls and top with lemon zest, parsley, smoked paprika, and/or toasted almonds.
