Sophie’s Stuffing
Ingredients
4 Carrots Diced
3 Celery Stalks Diced
1 Onion Diced
½ lb Sweet Butter
1 tbsp Parsley Flakes
¼ tsp Black Pepper
2 King Size Loaves of Bread (2 day old) Cubed
2 Eggs
8 oz Chicken Broth Warmed
Directions
Saute carrots, celery, onion, parsley flakes, and pepper in butter. Remove from stove and allow to cool.
Combine bread, eggs, and chicken broth in large bowl and hand knead.
Add saute mix and continue mixing with hands.
Spoon into 9 by 13 glass baking dish, cover with aliminum foil, and cook in an oven at 350 degrees for 60 minutes.
Remove the foil and cook for an additional 30 minutes
