Summer Salmon

Ingredients

4 tbsp Olive Oil
4 Salmon Fillets (About 4 oz. each)
6 oz Brie Cheese, sliced
2 tsp Butter
18 oz Diced Mangoes (peeled and seeded)

Directions

Preheat oven to 350 degrees F

Heat olive oil in a large oven-proof skillets over medium high heat, and sear salmon 4 minutes on each side.

Place brie cheese slices on top of salmon fillets. Cover skillet and place in preheated oven. Bake 15 minutes, or until the salmon is easily flaked with a fork.

Melt butter in a saucepan over medium heat. Simmer the diced mango 15 minutes, or until soft and smooth. Serve over the cooked salmon.
