Ballywindland Rolls

Ingredients

3 ½ cups Flour
2 tsp Baking Powder
1 ¼ sticks Butter
1 cup Milk
4 tsp Sugar
1 Egg

Directions

Sift flour and baking powder together in a large bowl.

Cut the softened butter in small cubes and rub well into the flour mixture.

Mix the sugar into the milk and add the sweetened milk to flour mixture to form an elastic dough.

Turn the dough out onto a lightly floured surface and shape into a square.

Roll the dough into an oblong and fold back into a square by folding in thirds.

Give a quarter turn and roll out.

Allow the dough to rest in the refrigerator for 10 minutes.

Repeat the rolling, folding, and resting process two more times.

Set the oven to 400 degrees.

Roll out dough and cut into rounds, brush lightly with milk and fold over to form half circles, sealing well.

Place on a lightly greased baking sheet and glaze with milk and egg mixture.

Bake for 20 minutes until golden brown.

Cool on a wire rack.

Serve plain or with honey.
